Cassoulet is of ancient origin, a very family-centred dish and is famously attached to the town of Castelnaudary whose reputation in its preparation is renowned.

“Cassoulet is the God of Occitan cuisine - God the Father is the cassoulet of Castelnaudary, God the son, is that of Carcassonne and the Holy Spirit, is the cassoulet of Toulouse.”

 

 Prosper Montagne, famous Paris chef from Carcassonne, quoted in an original work entitled "The Occitan Banquet" in 1929:

 

Castelnaudary's famous hot cassoulet, also offers a dessert version, with nougatine replacing the beans and ice cream in place of the meat, it is one of our many specialities, which also include sweets called as glorias and hallelujahs! This small city celebrates its emblematic dish throughout the year with the "Route du Cassoulet de Castelnaudary" and every last weekend of August with the unmissable Cassoulet Festival.
